| Aging in the Bottle |

The last step before it goes to market is the aging in the bottle, which can take up to a year and a half. When the wine goes in the bottle they say it gets “il mal di bottiglia” meaning he gets “bottle sick”. The original harmony is lost and the wine becomes rough and sharp: you wouldn’t recognize it if you tasted the mass first. I believe wine is alive and loosing the freedom to move around he had in the bigger barrels is something he dislikes and has to get used to. So it takes sometimes more than a year before I can say: <Yes, this is the wine I filled up.> And this, exactly this is the particular moment in which I can begin to label my wine and to sell it. As you can begin to enjoy it! A longer stay in the bottle will refine the wine more and more. As time passes by the tannins will become smoother and smoother and the aromas will slowly shift to more mature and round as the structure will become more elegant and the body will increase. Depending on the importance of the vintage, and we were very lucky until today because only the 2005 was a little bit less than a monumental vintage, the wines will age at least for another twenty years getting better and better. |
